abstract:
There were 16 honeys grouped in 4 categories due to crop time and source of nectar which were analysed. Dry matter of tested honeys ranged from 78.8 to 83.1%, while the average content of ash and protein was 0.26% and 0.62% DM, respectively. The average content of sugars were: 37.38% for fructose, 35.06% for glucose, 0.24% for sucrose, 5.46% for maltose, 1.86% for maltotriose and 0.34% DM for oligosaccharides. Oxygen content was from 0.074 to 0.154 O2 mg (dm3)-1 and pH from 5.24 to 5.45. Among the dielectric properties, relative electric permittivity εr (–), dielectric loss factor tg δ (–) and electric conductivity (S•m-1) were measured. Dielectric loss factor tg δ (–) for honeys from late summer crop and honey-dew was 103.79 to 8.07 and 94.22 to 6.91, respectively, and from 51.99 to 2.88 and 75.64 to 5.72 for spring and early-summer honeys when current frequency ranged from 500 to 10 000 Hz. Relative electric permittivity εr was found to be the highest for the group of early-spring honeys (from 114.35 to 64.2, respectively, at 500 and 10 000Hz). Honeys from honey-dew were characterised with the highest electric conductivity (778.7 S m-1). Significant relations were found between honey content of maltotriose and monosaccharides, ash and volatiles. Positive correlation (r = 0.8) was observed between maltotriose content and relative electric permittivity εr in the whole range of frequencies tested (500-10 000 Hz).
