Influence of wheat kernel geometrical properties on the mechanical properties and grinding ability

abstract: The influence of geometrical properties on wheat mechanical properties and grinding ability was investigated. The results showed that as the kernel thickness increased the force and deformation for the point of collapse also increased (r = 0.98 and 0.99). A negative correlation between the shape coefficient K3 and specific work up to the rapture point (r = �0.95) was found. Changes in the average particle size of the grinding stock were described by a regression equation in the function of a specific grinding energy and kernel thickness (R2 = 0.861).
