Pulp rheological properties of tubers in various sizes

abstract: Crawling tests with alleviation were carried out on cylindrical samples. The samples were collected from tubers 30-40 mm in width or width of > 60 mm. Samples collected from smaller tubers were subjected to lower crawling deformation ranges and revealed a higher visco-elastic modulus. Such differentiation of rheological properties of tubers in various sizes resulted from varied anatomical structures, i.e.: cellular size and structure.
