abstract: The objective of this study was to determine the resistance of French bean to compression at different rates of loading and low moisture content. To verify a model describing cotyledon cracking mechanism and to determine the effect of load rate on the strain and stress development each single cotyledon was compressed and force-deformation curve was collected. The force obtained at cotyledon crack at the rate of 10 mm s-1 indicates differentiation in varieties, however, no significant difference of the modulus of elasticity for most varieties was observed. Seeds after drying, becomes more fragile and therefore slightly deformation caused damage in the form of crispy crack. For large displacement of longitudinal shape of bean, a spherical cup of cotyledon was deformed to the elliptic contact area and regular cracks around core were observed. However, for low rate of axial deformation of whole bean, the compression caused one crack, that after unloading is frequently invisible. Using X-ray laboratory set Elektronika 25, some cracks were idicated as dark split on the bean rentgenographs.
