Influence of relative humidity on the thermal properties of apples

abstract: Using the solution for Fourier's heat diffusion equation for the case of its flow in an unrestricted cylinder with linear source generating a short heat pulse, we determined the thermal properties of apples. The influence of relative humidity on the coefficient of thermal conductivity, thermal diffusivity and volumetric specific heat capacity of four apple varieties at the temperature of 313 K (40°C) was studied.
