abstract: The aim of this work was to determine the effect of spring wheat variety and nitrogen fertilisation level on mechanical properties of grain. Three nitrogen fertilisation doses 0, 120, 240 kg N•ha-1 were applied in this experiment. The mechanical properties of wheat varieties (Bryza, Cytra, Zadra) were measured during uniaxial compression of grain. Water activity, water content, and selected mechanical parameters were determined. It was shown that force and displacement at rapture point and compression work increased as the nitrogen dose increased up to 240 kg N•ha-1. The mechanical resistance parameters obtained for wheat v. Zadra were significantly higher than those observed for varieties Bryza and Cytra.
