abstract: The work presents the results of a study on the influence of storage temperature (14ºC and 21ºC) on some mechanical properties of tomato fruit skin (Admiro variety). The Young modulus and the Poisson ratio were determined for the studied material. Samples were examined under uniaxial tension stress. A significant decrease of the Young modulus value was observed for fruits stored at temperature of 14ºC. The Poisson ratio also decreased at 14ºC whereas at 21ºC no significant changes were found.
