abstract: This paper presents overall characteristics of wheat flour milling process. The individual milling stages are discussed, such as breaking, sizing and sorting of ground wheat. The relationships between grain hardness and milling process are also discussed. The methods of wheat grain hardness measurement are described. Examples of wheat hardness index histograms obtained by using the Single Kernel Characterisation System are also presented.
