abstract: The aim of the study was the commodity science evaluation of selected barley varieties from ZHR Strzelce to be used for functional food production. The physical characteristics of the barley grain included determination of the share of seeds with dark seed coat, the colour of kernels, the colour of the groove, the weight of 1000 kernels, the bulk density of the grain, the degree of damage to kernels, the degree of seed coat cover, and the content of chaff. The studied lines and cultivars of naked barley were characterised by varied commodity features. The hulless barley lines were characterised by lower weight of 1000 kernels and higher bulk density than the hulled cultivar Stratus. The performed commodity science evaluations showed clearly that lines STH 4561, STH 4671 and STH 4676 are especially predestined for the production of grits.
