abstract: The trials have been carried out in a laboratory spouted bed drier. Measurements of changes in water content in the envelopes of yeast slurry dried on glass spheres have been made. The drying was performed at inlet air temperature t = 90°C and the thickness of the slurry envelopes on the spheres b » 0.2 mm. Air velocity in the cylindrical part of drying chamber ranged from 2.6 m s-1 to 4.6 m s-1. The influence of air velocity on drying rate and the value of average moisture flux from a unit area of inert spheres have been determined.
