Rheological properties of radish and small radish flesh

abstract:
The paper presents calculations of breaking stress smax and conventional elastic modulus EC evaluated on the basis of the σ-ε course for three speeds of measuring head in compressive strength and hysteresis tests. The experiment involved samples of radish and small radish flesh of different density and dry substance content. A considerable scatter of the mechanical properties studied was observed. On the basis on rheological tests it was found that cellular structure of radish had a greater potential of elastic energy accumulation and greater mechanical resistance than small radish tissue.
