abstract: The heat balance was drawn up of the fruit drier when apple and plum drying in a continuous cycle, as well as with the use of night breaks. Thermal efficiency of a steam boiler with wood combustion was 75.5%, and that of an air steam stove only 18.3-22.4% of heating steam enthalpy, and only 14-17% for the whole heating unit. The use of night breaks in apple drying shortened the effective drying time by 21% (equal to 5 hours), as well as allowing the saving of significant amounts of fuel and electric energy in comparison with drying without the breaks.
