abstract:
This paper presents a review of dynamic methods of fruit and vegetable mechanical properties measurements. The text focuses on indexes which enable bruise sensitivity determination based on strength properties instead of usually used physiological changes. The authors present their own stand construction for determining bruise threshold and bruise resistance of apples. The results of test measurements are also presented.
