abstract: The paper presents a study on changes in mass and dry mass content as well as modulus of elasticity in the tubers of two fractions of potato tubers cv. Salto. Significant differences were found in mass loss of tubers, resulting from their respiration and evaporation, and in content of dry mass for the studied fractions relative to the time of storage. The modulus of elasticity of tubers differed for the fractions (higher value for tubers of greater size) and for the time of storage (higher value for shorter time of storage).
