The acoustic properties of wheat grain with different endosperm structure

abstract: The aim of the work was to analyze the acoustic emission of two varieties of wheat with different endosperm structure. Water activity, water and protein content, glassiness and hardness as well as endosperm structure (by microscopic (SEM) method) were measured . The acoustic emission was measured by contact method using piezoelectric accelerometer 4507(Bruel&Kjaer). It was shown that spectral characteristic and most analyzed acoustic descriptor depended on wheat structure. Debranning of wheat grain caused significant changes in spectral characteristic and differing the power partition slope.
