Changes in selected quality parameters of potato tubers during storage

abstract: The purpose of this work was to determine the changes of dry matter, reducing sugar, total sugar in potato tuber of 19 cultivars during storage seasons from 2006 to 2011. After harvest and 7-month storage at temperature of 5°C and 8°C, the samples were taken for laboratory analyses and darkening tests. The content of chemical compounds depended mostly on the cultivars and temperature of storage. Dry matter, reducing and total sugars increased during storage. Correlation between reducing sugar content after harvest and their accumulation after storage and between starch content and reducing sugar content was found. The tubers of cv. Miłek, Benek and Marlen had a low reducing and total sugar content after storage at 5°C and 8°C. The Bellarosa, Roxana and Zagłoba cultivars showed high concentration of total sugars (> 1%) after storage at 5°C. Intensity of enzymatic darkening increased during storage. All of the investigated cultivars were characterised by very low and low after-cooking darkening after harvest and storage. The influence of storage temperature was not significant.
