Effects of morphological diversification on the variability of rheological parameters of the vegetable flesh model

abstract: The paper present results of a compression test carried out on the tissues sampled from carrot and parsley roots with respect to their morphological diversification. The results of the above tests were compared with parameters of the rheological model calculated on the basis of a creep and relaxation test. In relation to a single root, it was affirmed that there are non-essential correlations between compression and other test results. The mean values of the elastic modulus E, viscosity dynamics η and apparent viscosity ηa showed that the behaviour of the cortex and stele tissues under the influence of a load is different.
