Mechanical properties of an apple in relation to tissue structure

abstract: Mechanical properties of an apple tissue were examined and stress relaxation model was proposed. Rheological model of an apple tissue consists of 5 elements. This model described relaxation of the compressed material well taking into account tissue structure and its alteration by the force. A proposal to treat plant tissue as an aggregate of cells dependent on one another in which single cells are surrounded by a visco-elastic cell wall was put forward.
