abstract: The paper provides a description of analytical relationships and experiments concerning stress relaxation tests of carrot root samples. The experiments permitted the determination of time-changeable stress relaxation functions, bulk modulus, shear modulus and Poisson ratio describing the behaviour of plant material treated as a linear viscoelastic body. It was also found that the initial deformation rate affected the parameters of viscoelastic characteristics.
