Influence of time of storage on rheological proprieties of potato tubers

abstract: Creep tests were performed on the flesh of potato tubers of Salto cultivar during a period of proper storage. Cylindrical samples with dimensions of 14,7x10 mm were subjected to compression along the height, followed by relaxation. Stress level of 0.34 MPa was adopted for the tests, which corresponded to sample rebound of about 70%. An influence of time of storage as well as of the size of tubers on the value of elasticity modulus and creep velocity was observed. No influence of these factors was found on the level of rebound and on the dynamic viscosity.
